Basil chicken

A delicious and simple mid-week dinner recipe that can be whipped together in no time. I used candida-fighting creamed coconut to create the sauce and reduce the amount of tomatoes used to keep natural sugars as low as possible.


Time to prepare: 15 minutes

Difficulty level: Easy

Serves: 2


  • 2 organic chicken breast fillets, cut into pieces
  • 1 white onion, chopped
  • 3 cloves garlic, crushed
  • 2 large tomatoes, chopped
  • 20g slice of creamed coconut added to mug of boiling water OR 1/4 can of coconut milk read about why I use creamed coconut here
  • Handful of fresh basil, chopped


  1. Fry chicken in a tbsp coconut oil until browned – set aside on a plate
  2. Fry onions until soft, then add the garlic and chopped tomatoes and sautée for 5 minutes
  3. Add coconut milk and leave to simmer for a few minutes, adding water every so often to keep the sauce from drying out
  4. Add the chicken back into the pan to heat through
  5. Season to taste with salt and pepper
  6. Switch off the heat and stir in chopped basil
  7. Serve with fine green beans and buckwheat pasta


  • If you don’t have any coconut milk, simply substitute with more chopped tomatoes
